Our very first barrel 

She is American oak that has been charred medium. She holds an apple wine I made from fresh pressed apples grown in Lancaster. After 3 months Lou and I will sample a glass or two. I’ll then top it off with more of the same wine and let that sit for another 3 months. Just keep passing wine through as we go. Taste the new wine right next the the older oaked wine. After about 3 years or so I’ll bottle the whole barrel, add a dosage to create carbonation. Bang! Sparkling oak aged apple wine. I’ll then fill the barrel with a new wine and start all over again.
