Here is a shot of a one gallon batch of hard cider (5% ABV) that is going through a freeze concentration or ‘Jacking’. The water freezes and the concentrated apple liquor flows to the bottom leaving robust flavors and about 25% ABV. Fantastic when mellowed in oak. One gallon produces about a pint of luxorious Applejack. It’s one of my favorites. The juice was fresh pressed from the bountiful trees of Lancaster.
